Thanks to my sweet sister in law I am in love with Thai food, but it can come with a lot of added calories and sodium. This recipe is favorite for my hubby and supper simple, dump it in the crockpot and done.
This may seem like a bunch of ingredients, but altogether they are amazing, and without much prep, supper easy to put together.
Stick the boneless skinless chicken beasts in the crockpot (frozen if you like) then puree the red pepper (I do this so my kids will eat it) Then mix up the rest of the ingredients and dump them on top. Thats it! Super simple, Super delicious and dinner is done!
6-8 Boneless skinless chicken breasts (fresh or frozen)
2 Tbs ground ginger
3 cloves Garlic (I used garlic that is already pressed and bottled and it is about 1/4 c)
3 tsp red pepper flakes
1/2 C Natural Peanut butter
6 Tbs Lime Juice
3 Tbs sesame Oil
5 Tbs Soy Sauce
1 chopped red bell pepper (I puree it so my little ones will eat it)
Mix it all up pore it over chicken and set in crock pot on high for 4-6 hours or until falls apart. We love to make ours into a lettuce wrap, but you can throw it over rice or what ever you like enjoy! 🙂
